Permits and licensing

The Santa Clara County Department of Environmental Health permits food facilities across San Jose, Santa Clara, Sunnyvale, Cupertino, Mountain View, and Palo Alto. Fremont and Milpitas sit on the county line: Fremont is in Alameda County, so it permits through Alameda County Environmental Health.

• Businesses that manufacture, repack, or warehouse packaged food generally register with the California Department of Public Health.
• Proposition 65 applies statewide; we provide lot-specific heavy metal test results for each lot.

Getting through corporate vendor onboarding

Selling matcha to a tech campus is less about the tasting and more about the paperwork. The food service operator or procurement team usually asks for the same set of documents before a single bag is ordered, and the deal stalls when a supplier cannot produce them quickly. We keep these ready:

• Product specification per line: origin, harvest, cultivar, milling, and packaging.
• Lot documentation: lot number and milling date on every pack, with heavy metal and pesticide residue results for the lot.
• Organic certificates where the program requires organic, including the import paperwork behind the claim.
• Allergen and ingredient statements for the nutrition and labeling review.
• One reserved lot so every site pours the same matcha, which is what a multi-building program actually cares about.
